Sautéed Zucchini Medallions
Prep Time: 10 min, Refrigerate Time: 30-60, Cook Time: 20 min
What you’ll need:
1 Medium – Large Zucchini
1 Cup Balsamic Salad Dressing
1 Gallon Zip Lock Bag
Chop Zucchini into quarter inch pieces and place into gallon zip lock bag.
Add 1 cup of Balsamic Salad Dressing of your choice.
Let sit in the refrigerator for 30-60 minutes depending on taste.
In large frying pan place zucchini mixture over medium heat. Stir and flip until golden brown on both sides.
Enjoy this as a side dish with chicken and a baked sweet potato.
