Edamame Hummus
Ingredients:
- 2 cups shelled edamame
- 1 cup cooked chickpeas
- 1/2 avocado
- 3 small garlic cloves
- 1/2 cup freshly squeezed lemon juice
- 2 tbsp. avocado oil
- 5 tsp. sea salt
- 1/2 tsp. black pepper
- 1/2 cup water
Directions:
- In a food processor, combine all ingredients.
- Pulse to mix, then process until creamy smooth, but thick enough to dip. Add water if too thick.
